What makes it possible to separate ocean water into fresh water and salt?
Would it be the fact that they have different boiling points?

The process is called Desalination and the method used is Distillation.
In any distillation, the two compounds MUST have different boiling points. Keep in mind that the boiling point of any salt is really high. Therefore, like all distillations, one liquid is boiled and the vapors condensed through a pipe with a cooler. The cooler then cools the steam that will convert the vapors back to liquid form. Thats the separation.
The reason why we don’t do this is because only 0.05% of the world’s ocean water is actually drinkable.
